A Canadian in the US's thoughts on your problem
1. [Re]-Obtain [if you can] your Erie citizenship in the UK right now!
2. If you do marry, have your little one in Ireland (Erie, The Republic
etc..). The little one will get your UK passport anyway -- so why have the
little one in the UK? Nothing is gained unless there are special medical
circumstances forcing you to be in the UK.
3. Sponsor the spouse via the [rest of world] sponsorship route ... as I
would expect that the UK will merge its UK spouse sponsorship with EU spouse
sponsorship in the near future to reduce complexity of the process.
4. The UK-EU citizenship rules will probably be harmonized by the time your
Kafkaesque mess is over.
5. It does not matter where you marry the girl within the EU, but doing so
in the UK reduces the paperwork by a few microns.

Canada Immigration (oddstuff)
-- Quebec has a separate immigration 'stream' from the rest of Canada, but
it is harmonized with the rest of Canada.
-- IF Quebec lets you in, Canada does so by default.
-- Technically, I can only see Scotland & Northern Ireland having a similar
rule [of law] under the 'Home Rule' devolution of powers -- but I don't see
these powers being divested by Westminster any time soon. [Regardless of how
closely the Quebec model is followed.]
